With only a week to go, time is running out for making gingerbread: the dough needs to rest over night and the finished biscuits, too, need some time to mellow. If you have been planning to make a gingerbread house, you better get going – we’ll be making ours at the weekend, in case you need some inspiration But for those of you who don’t fancy a big gingerbread house, and who are possibly still short of a few presents, these mini gingerbread houses might be a viable alternative.
Made from my standard gingerbread mix, they are easy to make and don’t take too much time to decorate: simply roll out rather thinly and cut into house shape. The windows are cut, too, using a pointy knife.
Dust wit a little icing sugar and wrap them nicely in small cellophane bags for a tiny winter wonderland. Of you punch a hole into the top you can even use them as decorations for your Christmas tree.
