Lightly Spiced Steamed Apple Dessert

Makes: 4 portions
  • 4 pretty apples, not too sweet or too sour
  • 16 cloves
  • 400ml apple juice
  • 1 orange, unwaxed
  • 1 small piece of fresh ginger
  • ½ cinnamon stick
  • 200g Greek yogurt
  • 4 tbs freshly roasted almonds and pistachios, coarsely chopped
  1. Wash and de-core the apples, then decorate them with 3 cloves each.
  2. Place the apples side-by-side into a medium-sized casserole for which you have a tight-fitting lid.
  3. Add the apple juice, the orange peel, the ginger, aniseed and the cinnamon stick. Close the lid and bring it to boil, then reduce the heat and simmer for 15-20 minutes. You want the apples quite soft, but not completely disintegrated!
  4. In the meantime, heat the oven to 180C and roast the pistachios for 10 minutes or until they begin to release their aroma.Then chop them coarsely and leave them aside for later.
  5. Remove the apples from the pot and place them on the plates or into a serving dish. Cover and keep them warm, for example by leaving them in a warm oven.
  6. If the apple juice has already taken on a syrupy consistence, simply add a little bit of the range juice and leave it to cool down a bit. If it is very liquid, add the orange juice and simmer it for a little longer until it thickens.
  7. Using a fork, mix the yogurt with the syrup and around 4 tbs of the orange juice, then spoon the mix over the warm apples. Finally sprinkle the chopped nuts over it and serve either warm or cold, depending on outside temperatures.
